Activity of yeast in different sugar
Aim
My aim is to compare the respiration of yeast in different substrates of sugars.
There are three types of Carbohydrates: monosaccharides, disaccharides, and polysaccharides. I will be looking at monosaccharide and the disaccharide.
Hypothesis
• glucose and maltose would produce the highest rates of respiration because of
their structure and that the rates would decrease as the structure of the different sugars became less like a glucose molecule.
• sugars such as galactose which have very different molecular shapes from
glucose would give only very slow rates of respiration.
Background information
Yeast is a unicellular fungus. It can respire both aerobically or an aerobically but to produce alcohol anaerobic conditions are needed.
Respiration involves a series of redox reactions in which substrates are oxidised to carbon dioxide and oxygen is reduced to water. When oxygen is present sugars are completely broken down in three stages, glycolysis, Krebs cycle and oxidative phosphrylation to release carbon dioxide ......
