Ethiopia It is three o’clock and a multitude of civilians gather around the restaurant as comments are heard about that defiant African who refused to use his utensils and started his meal with his bare hands in an apparent act of rampage and savagism to the American eye. The truth of the matter is not the lack of education of that specific person, or the fact that he has never visited a restaurant, it’s simply the cross-cultural ethnocentrism being witnessed in the room by the presence of two cultures: Ethiopian vs. American. Ethiopia, a strange place for many American cuisine lovers, is known vastly for their use of peculiar ingredients in food; such as berberey: a red paste made up of a multitude of herbs and spices; another important ingredient is butter flavored by onions, garlic, ginger and spices (niter kebbeh) and also present is the traditional bread, called injera –a thin but spongy flatbread as large as tabletop- sometimes used as utensils; but our typical ......
